Use in recipes that call for baking soda or bicarb rather than baking powder. This alkaline raising agent is often combined with acidic ingredients to rise scones, muffins and biscuits.

Recipes

Sticky Toffee Pudding
For a pudding free from dairy and/or egg see suggested ingredient swaps in italics.

Oven 200ºC/Fan 180ºC/400ºF/Gas 6
75g Stoned dates
100ml Boiling water
1/2tsp Bicarbonate of soda
75g Butter or vegan butter
75g Brown sugar
1tbsp Black treacle
1 Egg or 1 tbsp chickpea flour 2tbsp water
75g Self raising white flour

1. Chop the dates into a bowl then add boiling water.
2. Stir in the bicarbonate of soda.
3. Smear a little butter inside 6 ramekins or an oven dish.
4. In a bowl beat together the butter and sugar.
5. Beat in the treacle followed by the egg (or chickpea water).
6. Add the flour, prepared date mixture and mix well.
7. Pour into the prepared dish(es).
8. Bake in a pre-heated oven for 15/25 minutes.
